Number of Servings: 8
Dice root vegetables and cook in butter with 2 cloves garlic, sweet basil, salt and pepper. Add wine and reduce. Add broth and zucchini. Cook turkey with salt, pepper, oregano, and parsley. Add to soup and cook as long as you want, but minimum 1 hour.
Grate parmesan cheese when serving if desired.
