Orange Craisin Pecan Scones

Introduction

Number of Servings: 24

Ingredients

    6 cups almond flour
    3/4 cup frozen orange juice concentrate
    3 eggs
    3 tsp baking powder
    1/4 cup + 1 T Truvia
    3/4 cup craisins
    1/2 cup chopped pecans


Directions

6 cups almond flour
3/4 cup frozen orange juice concentrate
3 eggs
3 tsp baking powder
1/4 cup + 1 T Truvia

Mix together to form fairly stiff dough.

Add:
3/4 cup craisins
1/2 cup chopped pecans

On an almond-floured surface, pat the dough out into a rectangle about 8" x 16". With a floured knife, cut down the center lengthwise. Then cut cross-wise into 6 equal portions. Cut each of those diagonally to form 24 triangles. Transfer each scone to a baking sheet sprayed with non-stick spray or lined with parchment paper. Bake at 400 for 15-20 minutes until done.
Transfer to rack to cool. If desired, can be lightly drizzled with cream-cheese glaze.
