Peanut Butter Chicken

Introduction

This is really delicious over steamed rice. This is really delicious over steamed rice.
Number of Servings: 4

Ingredients

    Chicken breast strips grilled by Kirkland 1 pack
    Peanut Butter, Kirkland Natural, 0.5 cup
    Coconut Oil, 1 tbsp
    Del Monte Petite Cut Diced Tomatoes, 1.75 cup
    Onions, raw, 1 large
    Carrots, raw, 1 large
    Ginger Root, 0.25 cup slices
    Jalapeno Peppers, 2 pepper
    Cider Vinegar, 1 tbsp
    Bullion, Chicken Flavored 1 cup

Directions

Finely dice onion and carrots, chop up ginger and jalepenos and saute them in coconut oil until soft.
Add chicken and canned tomatoes. Saute for about 5-10 minutes. Add Peanut butter, vinegar, and bullion, cover and reduce heat. Simmer for 10 more minutes.

Serving Size: Makes 4 servings
