Cauliflower Risotto

Ingredients

    1 small head of Cauliflower grated on tear-drop side of grater
    1/2 chopped onion
    2 cups chopped mushrooms
    1 Tbs minced garlic
    1/2 c chopped fresh parsley
    1 TBS grated parmesan chesse
    1 Tbs olive oil ( I use an infuser and so it is less)

Tips


Directions

Saute the onions, garlic and mushrooms in the olive oil. Grate the cauliflower and add to the onion mixture. Stir in 1/2 cup of Greek yogurt, parsley and cheese. tSaute covered for 5 minutes on low heat.

Serving Size: 6- 1/2 cup servings
