Cinnamon Apple Salad

Introduction

Light and cinnamony. Makes a great snack. Light and cinnamony. Makes a great snack.

Ingredients

    4 medium fresh apples
    1/2 cup dried cherries
    2 tbsp fat free cinnamon hazelnut coffee creamer
    1/4 cup walnuts, chopped
    2 oz fat free cream cheese
    2 tsp cinnamon, ground

Directions

Cut apples into bite size pieces.
Sprinkle cinnamon over apples and stir.
Add cherries and walnuts.
Melt cream cheese in the microwave long enough to soften.
Add creamer and stir until smooth.
Pour over fruit mixture, stir and refrigerate.

    Good, but I altered it a bit for less calories. Traded the nuts for chopped dates and the cream cheese for low fat vanilla yogurt. - 7/5/08

    I substituted a couple items like raisins instead of cherries and nonfat plain yogurt instead of cream cheese. I omitted the creamer only because I'm not a coffee drinker and did not have creamer on hand. But the end results were good! Nice quick and light recipe. - 6/21/09

    This was awesome! I made it for dessert and I am having more for breakfast. I substituted craisins for cherries and french vanilla creamer for the suggested one only because that is what I had on hand. I thought it sounded a little weird when I first read the recipe but WOW I am glad I tried it! - 1/14/09

    We had this salad while on vacation in Florida for Christmas holiday....we added more nuts (1 cup) because we love the walnuts in salad....and used caramel creamer instead of cinammon. It was Yummy ! - 1/4/09

    i made this.. I LOVE apples so any way to make it interesting is good. This was yummy. I used light cream cheese. All I add was butter pecan creamer, it was really good. - 6/27/08

    I just ate this for breakfast, and it was great! I used pink lady apples, low-fat farmer cheese, rice milk, and pecans. Tried again with cottage cheese, rice milk, and walnuts - just as good! - 6/22/08

    I cut it to 2 servings and used 1 1/2T of mushed up ff cottage cheese in place of cream cheese and creamer, 1/2tsp cinnamon, 1 med apple, 2T cranberries, 1T walnuts. It is very good! - 6/21/08

    I have made this several times. The first time I used pecans instead of walnuts. The second time I used walnuts but put in raisins (I liked this better) the third time I used Pecans and cherries. It is easy to make and very good. Everyone liked it. - 5/3/08

    This was good. I was leery of the fat free ingredients, but since they are used in such small amounts and seem to be just for a bit of flavor, it tasted fine. No reason to go for the "real thing," really. - 4/21/08
