Apple, bacon, and fresh greens salad

Introduction

The balsamic glazed onions and bacon provide so much flavor no salad dressing is needed. Yum! The balsamic glazed onions and bacon provide so much flavor no salad dressing is needed. Yum!
Number of Servings: 4

Ingredients

    3 slices bacon, chopped
    1/2 medium sweet onion, sliced into thin strips
    1-2 tablespoons balsamic vinegar
    1 apple (a tart one is best) chopped
    4 cups fresh salad greens (or just spinach if you prefer)

Directions

Saute bacon pieces in a pan over medium heat, until they fully grease the pan (about 2 min.) Add the onion and cook until it starts to turn transluscent (about 8 min.) Turn off the stove and add the balsamic vinegar to the onion/bacon mixture. Let it soak while you wash the greens and chop the apple.Toss all ingredients in a bowl to lightly coat the greens with flavor from the onions and bacon.

Serving Size: Makes 2 full plate servings or 4 side dish servings
