Rice with Peas and Meat

This is a Lebanese easy family meal for a weeknight. This is a Lebanese easy family meal for a weeknight.
Number of Servings: 10


    1 T. Olive Oil
    1/3 C. pine nuts
    1 medium onion, diced
    2 lbs. 93-percent lean ground beef
    1 T. salt
    1 tsp. allspice
    4 C. Water
    2 bouillon cubes
    3 C. Peas
    2 C. brown rice
    1 tsp. cinnamon


Serve with yogurt sauce (plain yogurt thinned with water, add dried mint, diced cucumber and salt).


Brown pinenuts in oil, remove from oil and set aside. Brown onion in oil and saute until transparent. Add ground beef, salt and allspice and brown halfway. Add water to cover. Add bouillon and peas and boil 8 minutes.

Strain meat and peas, reserving broth. Measure broth and add water if necessary until you have 4 Cups. Taste and add spices if necessary. Add 1 tsp. Cinnamon.

Boil Broth, add rice, reduce heat and cook until done, about 20 minutes. Add meat and peas back and mix. Sprinkle pinenuts and let it rest 1/2 hour. Stir all together.

Serving Size: Makes 10 1-Cup Servings
