6 cups black beans, cooked (reserve liquid) Juice of 1 lemon 1 tsp salt 1 tsp cumin 1 tsp cayenne 1 tbsp chili powder 1/2 tsp black pepper 2 tsp. garlic powder 1 tsp. onion powder 3/4 cup sharp shredded cheddar
Mix all ingredient except cheese (including the cooking liquid from the beans) into a sauce pan. Blend beans with an immersion blender until smooth. Cook until thick. Add more seasonings as needed. Remove from heat. Add cheddar and stir well.
