IntroductionVery easy dinner if you're getting home late, but perfect for fall. Very easy dinner if you're getting home late, but perfect for fall.
5 oz cooked chicken breast, chopped
2 cups shredded romaine (or spinach)
1/2 cup sliced cucumber
1/2 medium apple
2 Tbs crumbled blue cheese (the real thing, not low fat!)
2 Tbs Craisins
2 Tbs chopped walnuts
2 Tbs Balsamic Vinegarette Dressing (I like Trader Joe's)
Serving Size: Makes one large serving. If I'm eating salad for dinner, it's got to be a serious salad!
