Meatless Black Bean Chili




Number of Servings: 4

Ingredients

    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 1 cup, chopped
    Garlic, 3 cloves
    2 cans black beans (3.5 cups) drained and rinsed
    2 cans diced Tomatoes (3.5 cup)
    Chicken Broth or Bouillon, 2 cup
    Salsa, .5 cup
    Cumin ground, 2 tsp
    Chili powder, 2 tsp




Directions

Saute onions, peppers and garlic in non-stick skillet.

In soup pot combine tomatoes, beans, broth, salsa, and spices. Add the sauted veggies.

Boil and simmer about 30 minutes.


Serving Size: 4 11/3 cup servings
