Fruit and Fibre Muffins

Ingredients

    All-purpose flour- 1 cup
    Whole wheat flour- 1/4 cup
    Wheat bran- 1/4 cup
    Ground cinnamon- 2 tsp
    Baking soda- 1 1/2 tsp
    Baking powder- 1 1/2 tsp

    Grated carrot- 1 cup
    Finely chopped apple, with peel- 2 cups
    Raisins- 1/2 cup
    Peacans (optional)- 1/2 cup

    Large egg- 1
    Liquid egg beaters- 60 ml
    Milk (non-fat)- 1 1/4 cup
    Applesauce- 1/4 cup

    Banana (mashed)- 1 medium (approx. 1/3 cup)
    Liquid honey- 1/4 cup

Directions

Combine first 7 ingredients in a large bowl.

Stir in carrot, apple, raisins and pecans (optional not incl. in nutritional info). Make a well in centre.

Beat next 4 ingredients together in small bowl. Pour into well. Stir.

Add banana and honey. Stir until just moistened. Fill each greased/sprayed muffin cup. Bake at 375 F (190 C) for 20 minutes.

Makes 12 large muffins.
