Chicken Vegetable Soup

Number of Servings: 6


    1 medium onion chopped
    1 tbs butter, melted
    1 tsp minced garlic
    40 ounces of chicken broth
    1 cup chopped celery
    1 cup chopped carrots
    1 cup chopped turnips
    3 small potatoes, diced
    1 cup chopped kale
    2 cups cooked chicken
    1 can tomatoes with green chilis
    1 cup chopped fresh tomatoes
    1/2 chopped fresh basil
    1 tsp oregano


melt butter in soup pot. Cook onions till soft. Add garlic. Saute briefly. Pour in broth. Add chopped carrots, turnips, tomatoes and potatoes. Cook 20 minutes. Add kale and spices. Bring to a boil. Simmer additional 20 minutes.
