Ingredients

450 g flour (I use a mixture of wholemeal and white flour)
1 tsp bicarbonate of soda
25 g butter or 1 tbsp olive oil
300 ml (soy) milk
½ lemon
Tips
Any leftovers will be hard and not very nice. They’ll still be good for French Toast, though.
Directions
Preheat oven to 180ºC/350F.
Add lemon juice to the milk.
Leave to stand for about 15 minutes.
Add bicarbonate of soda to flour and mix well.
Rub in butter or olive oil.
Mix in sour milk and knead lightly until you’ve got a soft dough.
Shape into a loaf of bread, about 4 cm thick.
Use a knife to cut a criss-cross pattern across the top.
Bake in oven for about 25-30 minutes.
Serve while still warm.
