Curry Lime Chicken

Ingredients

    2 boneless, skinless chicken breasts
    4 Tblsp butter
    1 tsp curry powder
    juice from 1/2 lime
    zest from 1/2 lime
    1 lime for serving
    1 large egg beaten
    seasoned bread crumbs

Directions

Rinse and dry each chicken breast. Cut slit in side of each to form pocket. Mix together juice of 1/2 lime, lime zest, curry powder and butter. This is easier if you melt the butter, mix the ingredients, then allow it to harden again (only take a few minutes in freezer). Put 1 tablespoon of butter mixture in slit of each chicken breast. Dredge chicken in beaten egg and then coat with bread crumbs. Place in baking dish, pace 1 tablespoon of butter mixture on top of each breast,cover and bake at 350 for 10 minutes. Remove cover after 10 minutes, turn chicken over and bake for antother 10 minutes. Seve hot with additon lime wedges
