Chicken & Barley Soup

Introduction

A hearty chicken soups with lots of veggies. A hearty chicken soups with lots of veggies.
Number of Servings: 6

Ingredients

    8 oz Chicken Breasts, cut in 1" pieces
    1 small onions, cut in chunks
    2 carrots, pealed, cut in chunks
    1 cup celery, cut in chunks
    8 cups water (more or less as needed)
    1 Tablespoon minced garlic
    1/2 cup pearl barley
    2 teaspoons dried basil
    2 teaspoons Italian seasoning
    2 teaspoons chicken bullion
    1 14 oz can pinto beans
    2 cups shredded zucchini, frozen
    salt and pepper, to taste


Directions

Brown chicken in oil. Put all ingredients except zucchini in 3 qt crock pot. Puree zucchini in blender, adding a little water if needed. Add to soup. Cook on high for 4 hours or low for 7 hours.
