tomato & carrot soup

Ingredients

    6 large tomatoes, 2 carrots, 1 parsnip, 1 leek, 2 yellow onions, 2 tbs olive oil, 6 cups organic low sodium chicken broth, 1 tsp sea salt, red pepper flakes to taste, fresh basil to garnish

Directions

roast all veggies with olive oil, salt and pepper for an hour at 425 degrees. peel skin off tomatoes. add everything to a pot of boiling chicken broth and let cook for 10 minutes. blend everything together. garnish with basil.
