Introduction

This is a Tex-Mex version of tuna salad that's really popular with my family. This is a Tex-Mex version of tuna salad that's really popular with my family.
Number of Servings: 8

Ingredients

    2 Cans cream of mushroom or cheddar soup
    Two cans tuna packed in water
    One package wide noodles cooked and drained
    Half a package of frozen peas
    1 cup shredded cheddar cheese
    1 cup water or chicken stock - water has less sodium
    3 tablespoons chili powder
    3 teaspoons cumin
    Half a teaspoon of cayenne pepper or red pepper flakes

Tips

We like this Tex-Mex version but other seasonings can work to try Parsley sage rosemary and thyme for example, the Scarborough fair four. If you're not worried about the calories, you can crumble saltine crackers mixed with melted butter and sprinkle over the top for crunchy crust.


Directions

Mix together soup, tuna, and cheese, add frozen vegetables, water, seasonings, and cooked noodles. Bake in a 325░ oven for 20 to 30 minutes until sauce is bubbling.
