Bob's Millet "Meat" Balls, Modified

Ingredients

    Navy beans, .75 cup
    Low Sodium Broth, 2 cup
    Onions, 1
    Garlic, 1 clove
    Basil, 1 tbsp
    Oregano, ground, 1 tbsp
    Thyme, ground, 2 tsp
    Paprika, .25 tsp
    Garlic, 1 tsp
    Grain Brown Rice Bread Crumbs (plain), 0.75 cup
    Parmigiano Reggiano finely grated, 1 oz
    salt to taste

Directions

Soak millet overnight in water to cover. Soak beans overnight in 3 c. water.

Cook millet in 1.5 c. fresh water for about 15 minutes, until water is absorbed. Cook beans in 2 c. broth until completely absorbed.

Puree beans, onion, garlic, and spices in food processor. Mix into millet and add bread crumbs and cheese. Add water as needed for desired texture. Add salt to taste.

Shape into 1" balls and place on parchment-paper lined baking sheet. Bake 20 minutes, flip, then 20 minutes more for total cooking time 40 minutes. Serve with Marinara.

Serving Size: makes approx. 40 "meat" balls
