Veggie Omelet

Number of Servings: 2

Ingredients

    2 Large eggs
    3/4 cup Eggbeaters
    1 tsp canola or olive oil
    1/3 cup chopped onion
    1 small sweet red pepper
    1/2 cup chopped mushrooms
    1/2 cup raw spinach
    salt & pepper to taste

Tips

I use a good non stick pan to lessen using added oil

Directions

Heat oil in skillet over medium low heat
Add chopped veggies and saute until softened
Beat eggs and eggbeaters in a bowl and pour in skillet with veggies
Sprinkle with salt and pepper
Let cook until mostly set
Using spatula divide in half and carefully turn over and cook until done
