Easy Vegan Chicken (Chik'n) Curry

Introduction

Number of Servings: 3

Ingredients

    1 package of vegan chicken strips, defrosted (I use Morningstar Farms Meal Starters Chik'n Strips)
    1 medium onion, diced
    1 tablespoon extra virgin olive oil (or canola oil)
    1 tablespoon curry powder
    2 cloves of garlic, minced
    1 cup vegetable stock
    1/3 cup of golden raisins (I have used brown raisins when I am out of golden raisins)
    1 1/2 tablespoon ketchup

Tips

You can adjust spices to your taste. It's a mild curry recipe.


Directions

1. In medium sauce pan, sauté defrosted Chik'n strips, onions and garlic in olive oil over medium heat until tender.
2. Add curry powder stir until Chik'n strips and onions are thoroughly and evenly coated.
3. Stir in vegetable broth, ketchup and raisins.
4. Reduce heat to low and simmer until sauce thickens.
5. Serve immediately over brown rice.
