2 bags frozen broccoli (can use the equivalent of fresh, if you want)
4 cups cooked brown rice (or wild rice, or white rice, or barley, or a combination. I used 2 bags of the steam-in-the-bag frozen brown rice with some broccoli bits)
2 small cans fat free cream of mushroom soup
6 chicken tenderloins
1 onion, diced
1 tbs butter
salt and pepper to taste
you can get almost everything frozen and just microwave it, if you want it super fast. Buy a roasted chicken already cooked at the store and use bits of that too. So many easy shortcuts for this recipe. You can also add any other spice for another flavor... like curry powder or cumin... try adding other veggies. Lotsa options!
dice your onion
slice the chicken into bite-size pieces. cook with the onion til chicken is cooked through, using the butter.
steam your broccoli
Cook your rice
Mix the chicken/onion mixture in with the rice and broccoli. Add the cream of mushroom soup.
ta da! all done.
