Introduction

Low fat, low carb, South Beach, HCG diet compatible Low fat, low carb, South Beach, HCG diet compatible
Number of Servings: 4

Ingredients

    1/2 can coconut milk
    2 Tablespoons curry powder
    4 cloves crushed garlic
    1 pkg. Stevia Or Splenda
    Salt and pepper to taste
    2 lbs skinless chicken breasts

Tips

Didn't have lite coconut milk, so used regular coconut milk.


Directions

Combine all ingredients and put in large ziplock bag. Add chicken, either cubed or in serving sizes. Seal bag and shake to cover chicken in sauce. Let sit in fridge overnight. Using a large non stick pan, add chicken and sauce to pan. turn heat to medium high. Cook chicken until cooked through, turning after each side has browned.

Makes 4 servings (or 6 servings of 100 g each)

If you're carb conscious, serve over cauliflower or broccoli.
