Freezer Breakfast Burrito

Introduction

You can whip these up quick on Sunday, wrap tight in wax paper, freeze and have delicious breakfasts for a couple of weeks! Microwave on high for 30 seconds, flip it over and give it another 30 seconds. Delish! Ingredients

    12 eggs
    2 T butter
    1 large red bell pepper diced small
    1 lb. bulk sausage
    1 c. shredded taco cheese
    12 soft taco size tortillas

Tips

Obviously, you can cut the calories here quite a bit by using low fat or meatless sausage or skipping the sausage completely. I've made them with seasoned ground turkey too. Also, i realize the butter is unnecessary, but it does add so much flavor!


Directions

In one skillet melt the butter and cook the red bell peppers until slightly soft. Add the eggs and scramble them. In another skillet, brown the sausage. Add the eggs to the sausage and mix thoroughly. Lay a little cheese down the center of a tortilla, add a good size spoonful of the egg/sausage mixture. Fold down the top and bottom of the tortilla and roll it up. Wrap tightly in wax paper and repeat for all the tortillas. Lay the burritos in a single layer on a baking sheet and freeze. Once frozen, place them in a large ziplock. And there you go! Enjoy!
