Mashed Potato topped Chicken Pot Pie

Ingredients

    1 tbl olive oil
    1 medium onion, diced
    .25 cup flour
    1 tbl smoked paprika
    1 tsp salt and pepper
    1.75 cups chicken broth/stock
    1 16 oz bag mixed vegetables
    1 cup mushrooms, diced
    8 Yukon Gold potatoes, cubed
    2 cups rotisserie chicken
    salt, pepper and smoked paprika to taste

Directions

Preheat oven to 350. Prepare homemade pie crust or use premade pie crust and layer in 8x8 pan.

Boil potatoes. Drain. Return to pot and mash. Season with salt, pepper and paprika to taste. Set aside.

Cook onion in oil. Add flour. Immediately add broth/stock and wisk until thickened. Add mushrooms, frozen vegetables and chicken. Stir until combined.

Pour chicken mixture into prepared pan. Top with mashed potatoes. Season with additional salt, pepper and paprika if desired. Bake for 35 minutes or until golden brown.
