1/2 C fresh spinach
1/2 C fresh romaine
1/4 C broccoli
1/4 C cauliflower
1/4 C Chopped carrots
1/4 C chopped celery
1/4 C chopped cucumber (peeled)
1/2 C nonfat cottage cheese
1/4 C Feta cheese
3 TB unsalted sunflower kernels
3 TB unsalted soy nuts
2-3 TB balsamic vinegar
Can exchange the chicken with any meat, I like to use salmon.
Serving Size: Recipe makes 2 salads.
