Healthy Chicken Salad

Number of Servings: 2

Ingredients

    1/2 C fresh spinach
    1/2 C fresh romaine
    1/4 C broccoli
    1/4 C cauliflower
    1/4 C Chopped carrots
    1/4 C chopped celery
    1/4 C chopped cucumber (peeled)
    1/2 C nonfat cottage cheese
    1/4 C Feta cheese
    3 TB unsalted sunflower kernels
    3 TB unsalted soy nuts
    2-3 TB balsamic vinegar

Tips

Can exchange the chicken with any meat, I like to use salmon.


Directions

Put all veggies in bowl, place cheeses, nuts and chicken on top until ready to eat. Then mix all together.

Serving Size: Recipe makes 2 salads.
