Introduction

Made this recipe up when I wanted something quick and simple that could go in the oven while I showered after getting home from the gym. Named it smashed chicken cuz I smash it to make it thinner and cook quicker. Named it smashed chicken cuz I smash it to make it thinner and cook quicker.
Number of Servings: 4

Ingredients

    Boneless, skinless chicken breast
    Canned diced tomatoes (I like fire roasted or with chilis)
    Shredded cheese (optional)

Directions

Put the thawed chicken breast between plastic wrap and "smash" it to about 1/2".
Put chicken in casserole pan and cover with diced tomato.
Cover with tinfoil and put in 425 oven for about 25 minutes.
Cover with cheese if you want and return to oven until cheese is melty.

Serving Size: Makes 4 servings (cut each pc of chicken in half after cooking)
