Banana chocolate chip cookies

Ingredients

    1 cup shortening (I use Spectrum organic shortening - it has no trans fats)
    1 1/2 cups sugar
    2 eggs
    1 tsp vanilla
    2 3/4 cups flour
    1 1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup lowfat buttermilk
    1 cup mashed ripe bananas
    2 cups chocolate chips

Directions

Cream shortening and sugar. Add eggs and vanilla; blend well. Combine flour, baking soda, and salt. Add to egg/shortening mixture alternately with buttermilk and mashed bananas. Stir in chocolate chips. Refrigerate dough for at least 1 hour.

Drop by spoonfuls onto cookie sheet. Bake at 350 for 8-10 minutes.
