Introduction

This cabbage dish mimics the traditional "Pigs in a Blanket" recipe, but adds kale and deconstructs the baked cabbage wraps. This cabbage dish mimics the traditional "Pigs in a Blanket" recipe, but adds kale and deconstructs the baked cabbage wraps.
Number of Servings: 8

Ingredients

    1 medium head of cabbage, chopped
    1 bunch of Kale, chopped (approximately 2 cups)
    1 pound lean ground beef, browned
    1 medium onion, diced
    1 cup quinoa, prepared
    1 cup brown rice, prepared
    1 stick butter
    Seasonings

Tips

*For seasonings, I use garlic powder and Trader Joe's 21 Seasoning Salute.


Directions

Brown the burger with diced onion. While the burger is browning, prepare the quinoa and brown rice. Mix with burger after done. Chop cabbage and kale.

Grease a large, 9x13 baking dish. Place meat/rice mix on the bottom. Top with the cabbage and kale. Dot with butter. *Top with your choice of seasonings. Cover and bake at 350 degrees for one hour.

Serving Size: Makes 8 servings
