Number of Servings: 6

Ingredients

    3 Cans (10.75 ounces each) condensed chicken rice soup
    3 cups reduced sodium chicken broth
    1/3 cup lemon juice
    3/4 cup egg substitute
    1 precooked chicken breast, shredded
    1 tablespoon fresh parsley finely chopped (optional)

Directions

1. In a large saucepan, combine soup, chicken broth, and lemon juice. Bring to boil over medium heat; reduce heat to simmer.
2. In a small bowl, gradually wish 1/4 cup of the hot broth mixture into egg to prevent curdling. slowly pour the egg mixture into remaining hot broth mixture, stirring constantly.
3. stir in chicken; heat through. stir in parsley (optional).
4. Ladle hot soup into 6 soup bowls (1 cup serving).
