Introduction

Number of Servings: 2

Ingredients

    6 ounces raw chicken breast cutlets cut into pieces about 3/4 inches

    2 3/4 inch slices of fresh pineapple cut into 3/4 inch chunks

    1 tablespoon pineapple jam

    1/2 cup unsweetened pineapple juice

    1 tablespoon Smart Balance Extra Virgin Olive Oil Buttery Flavor Spread

    Salt to taste

    Onion powder to taste, not too heavy


    I have to tell you it was very yummy. I ate it all but it could easily make two generous servings. I had steamed peas and steamed corn with it.

Directions

Spray a non-stick skillet with Pam Olive Oil. Place the pineapple chunks into the skillet and cook until brown, stirring intermittently. Add the chicken pieces and lightly brown. Add the pineapple juice, jam, salt and onion powder and cook until pineapple juice cooks down completely. Add the Smart Balance and cook and stir until it is all melted. Serve.
