Mini Pizzas

Ingredients

    1 package active dry yeast
    3 Tbsp warm water
    5 cups white whole wheat flour
    1/4 cup sugar
    5 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 cup vegetable shortening
    2 cups 2% milk
    18 oz mozzarella cheese, shredded
    2 1/4 cups tomato sauce (seasoned to taste)

Directions

Preheat oven to 400 degrees. Mix yeast and water. Set aside. Mix all dry ingredients together and cut in shortening until mixture resembles course crumbs. Mix milk with yeast mixture and stir into dry ingredients. Turn out on floured board and knead for a minute or two. Roll out dough to 1/2" thickness and cut with a 2" biscuit cutter. Place on a baking sheet sprayed with cooking spray. Bake approximately 15 minutes. Take biscuits from oven and slice each one in half, then place back on baking sheet, cut side up. Spread 1 Tbsp tomato sauce and 1 Tbsp cheese on each half. Return to oven and bake another 2-3 minutes or until cheese is melted.
