Introduction

Ingredients

1 cup whole wheat flour
4 tsp flax seed
1 cup bran flakes cereal (not sugar coated)
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoon ground cinnamon (or pumpkin pie spice)
1 teaspoon ground clove
1/2 cup raisins or chopped prunes
1 large egg
1 6 oz no fat vanilla yogurt
1 c canned pumpkin
1 teaspoon vanilla extract
Tips
Directions
Preheat oven to 400 degrees. Spray muffin tins with Pam.
Mix all dry ingredients together in a large mixing bowl.
Blend egg, pumpkin &yogurt and vanilla in another bowl.
Then add to dry ingredients adding flax seeds and raisins/prunes last.
Mix thoroughly and then fill muffin tins.
Bake 15 minutes or until browned.
These freeze well.
