Rita's Oatmeal Buttermilk Pancakes w/Cinnamon

Introduction

Like Mom would make. Requires planning. Like Mom would make. Requires planning.
Number of Servings: 17

Ingredients

    Combined the following and soak overnite in Fridge:

    2 cups Quick Oats
    2 1/2 cups Buttermilk
    4 Tbsp Stevia (this is a 1/4 cup)
    1 tsp salt
    The next day add:
    3/4 cup whole wheat flour
    1 tsp soda dissolved in 2 Tbsp Hot Water
    2 Tbls oil

    In skillet make approximately 2 oz pancakes
    Cook on medium heat extra long due to thickness of cake batter.

Tips

I have been using my scale alot. I "tara" the scale with the bowl o mix on it, scoop out 2 oz of mix (appr. 2 Tbsp), and I make 3 per "pan load".
