Introduction

Number of Servings: 12

Ingredients

    Cauliflower, raw, 2 head, medium (5-6" dia in flowerets)
    Parsnips, 3 parsnip (9" long),peeled and cubed
    Turnips, 3 medium peeled and cubed
    *Christopher Ranch Whole Roasted Garlic Cloves, 2 garlic heads (18 cloves, mashed)
    Butter, salted, 4 tbsp, melted
    *Margarine, 70% vegetable oil spread, 2 tbsp, melted
    Roasted Garlic Extra Virgin Olive Oil, 2 Tbsp
    Milk, 1%, 1/2 cup
    salt/white pepper to taste

Tips

number of servings depends on size of vegies.
you can use less butter/margarine, but don't stint on the garlic and garlic oil!


Directions

1. cut cauliflower into florets, steam in microwave until very soft, about 15 minutes. Peel and cube turnips and parsnips, and steam until very soft, about 15 minutes.
2. combine oil, butter, margarine, milk and garlic in a bowl, mix well, mashing the garlic.
3. Combine all ingredients in a large bowl or pot, and puree with an immersion blender. Alternative: Place all vegetables in a food processor bowl, puree while adding liquids/garlic through the feeding tube. Salt and pepper to taste. Rewarm in microwave or oven on 350 for 20 minutes +/-. Enjoy!


Serving Size: makes 10 -12 servings (1/2 cup), depending on size of vegies
