Chicken Barley Soup - slow cooker

Ingredients

    To Slow cooker add:
    2 - 900 Ml / 7.6 Cup Cambells no Salt added broth
    2 stocks of Celery - chopped
    2 large carrots - chopped
    1 Medium onion chopped
    3/4 Cup - rinsed - pearl barley
    1 Bayleaf
    Poultry dressing, spiced pepper to taste

    Roast in oven
    6 - skinless chicken thigh
    Season with poultry dressing, rosemary, thyme - to taste



Tips

Total Calories 1,307 or 218 calories for 1-1/2 C broth with 50 grams/ 1/3 Cup of cooked chicken.

I added 1/3 C of frozen peas to my individual serving - calories not in calculation.

Directions

Cook ingredients on low until barley is cooked approx 6 hrs - let cool

Roast Chicken thighs, drain, let cool, remove meat from bone - yields approx 300 gram meet.

Combine chicken with broth mixture.
Heat to serving temperature and serve.


Serving Size: 6 - 1-1/2 Cups of broth and 50 Grams / 2/3 C chopped chicken
