Number of Servings: 20


    4 cups mashed sweet potatoes or yams
    1/2 cup splenda brown sugar
    1/3 cup egg substitute such as egg beaters
    1 tsp pure vanilla extract
    1 tsp cinnamon
    1/2 cup melted butter
    1/3 cup light cream

    Topping Ingredients
    3/4 cup light brown sugar
    1/3 cup flour
    1 cup chopped pecans
    1/3 cup butter, melted


1. Mix caserole ingredients together, beating until smooth.
2. Place into greased 2 quart casserole dish.
3. Combine topping ingredients together and pour evently over top of potatoes.
4. Bake in preheated degree F oven for 25 to 35 minutes

Serving Size: 20 - 1/2 cup servings
