Cran-Fruit Relish

Introduction

This is our new favorite in place of plain cranberry sauce at holiday gatherings. Sometimes I add chopped walnuts too, but these are not included in the recipe here or the calorie count. Ingredients

    2 cans whole berry cranberry sauce
    1 can( 20 oz) lite cherry pie filling
    1 medium apple
    1 medium navel orange
    1/4 c orange juice

Tips

This cranberry relish will be more liquidy than you may like. If so, do not add extra orange juice.


Directions

Peel, core and chop apple. Peel orange and remove white pith. Section and cut into small pieces over a medium saucepan (to capture the juice). Cut into small pieces. Add the apple and orange pieces to the pan along with the additional 1/4 cup orange juice. Add 2 cans whole berry cranberry sauce, and 1 can lite cherry pie filling. Heat over medium flame and stir. When all is well combined, pour into 1-quart casserole dish and refrigerate to gel.

Serving Size: Makes 16 1/2-cup servings
