Veggie Quesadillas

Introduction

Easy vegetarian quesadillas you can make in a skillet, oven, or quesadilla maker. Easy vegetarian quesadillas you can make in a skillet, oven, or quesadilla maker.
Number of Servings: 4

Ingredients

    4 flour tortillas
    1/2 c black beans
    1/2c canned corn
    1 avocado, sliced
    1/2 c cheddar cheese, shredded
    1/2 c spinach
    Salsa (optional)

Directions

Top two tortillas with all other ingredients, then cover with two remaining tortillas. Cook in a skillet, quesadilla maker, or oven, flipping over halfway through, until both sides are lightly browned and cheese is melted. Cut each quesadilla in half, slice,and serve with salsa if desired.
