Cowboy Caviar

Introduction

A vegetable packed delight that fills you up with little calories. A vegetable packed delight that fills you up with little calories.
Number of Servings: 14

Ingredients

    3 c black or pinto beans
    1.75 c corn
    4 oz black olives
    4 roma tomatoes
    1 lg red onion
    1 red pepper
    1 yellow pepper
    1 orange pepper
    2 jalapenos or Tabasco sauce
    1 bunch cilantro, I used 2 t dried parsley
    3 T lime juice
    3 T canola oil
    2 c jicama, cubed


Tips

I like to add chopped cabbage and eat as a coleslaw. Delicious.


Directions

Put all ingredients in a large bowl and stir to combine. Store in the refrigerator.
