5 links uncooked turkey sausage
2 large onions coursely chopped
1 fennel bulb coarsely chopped
1 sweet potato, peeled and cubed
1 russet potato, peeled and cubed
1 can white kidney beans, drained
1/4 cup white wine (optional)
2 cups chicken broth
5 cloves of garlic, finely chopped
1 tbsp Extra virgin olive oil
1 tbsp poultry seasoning (or dried thyme and sage)
Tips
Use frsh thyme and/or sage if you have it for an added kick of flavour. For another dimension of flavour and texture remove from the oven after 60 minutes and ocver the top of the mixture with panko bread crumbs and grated parmesan. Cook the last 30 m inutes without the lid so that the bread crumbs and cheese form a nice crunchy crust. (this will change the nutritional information though)
Directions
In a dutch oven (or oven-safe pot) heat the olive oil and saute the onions and garlic until the onions are translucent. Add the white wine and stir well to de-glaze the pot. Remove from heat and add the sweet potatoes, the potatoe,the fennel, white beans and the sausage, add the seasoning along with some salt and pepper and stir well to combine.
Place a lid on the pot or dutch oven and place on the middle oven rack for approx. 90min.
Serving Size: Makes 8 soup-bowl portions or more
