This dish can be served as a side with meat and/or vegetables. It can be vegetarian if you substitute vegetable broth. I like to serve vegetarian chili over it instead of having tortillas. A little more broth will make a looser, more mush like polenta that can be mixed with each serving of chili. This dish can be served as a side with meat and/or vegetables. 2 1/3 cups chicken broth
3/4 cup corn meal
1 tbsp butter
1 tbsp chopped flat leaf parsley
Tips
You can add other herbs depending on the cuisine you you are serving. Basil & parsley for an Italian dish. Cilantro for a Mexican dish. This can be served as is straight from the pan or cut into servings and sauteed with a bit of butter or cooking spray until lightly browned. I've never tried but I've read that it grills well too. I sometimes add a tbsp or two of grated Parmesean cheese for added flavor
Directions
Bring broth to a boil. Slowly whisk in cornmeal; add butter and parsley; continue whisking until thick. Pour into prepared pan. Allow to sit until firm enough to cut.
Serving Size: 6 scant 1/2 cup servings. (about 95 grams or 3.5 oz each)
