Ingredients

1 lb. carrots, diced
4 small potatoes, diced
1/2 c. fat free half and half
8 oz. cheddar cheese
Tips
Directions
Cook carrots in water with vegetable boullion, and some garlic, salt, and pepper, if you like. Add potatoes after the carrots have boiled for a while. Simmer with fat free half and half until potatoes are soft. Add cheese to melt and blend.
