Chicken* and Veggies in Coconut Curry Sauce /Low Carb

    3 oz chicken breast, poached*, shredded or chopped

    2 c [200 g] zucchini, chopped
    1 c [100 g] green beens, trimmed and cut in 1" pieces
    1 c [100 g] broccoli, flowers and stems, chopped finely
    1 c [100 g] red pepper, seeded and sliced thinly
    1/4 c parsley, chopped (or cilantro if you like it)
    2 garlic cloves, grated
    1 tbsp curry powder
    cooking spray
    freshly grated sea salt and black pepper to taste

    1 c chicken broth*
    1 tbsp coconut milk
    1/2 c greek yogurt, fat free, plain


TIP: freeze extra coconut milk in small amounts suitable for your family recipes in ice cube trays, then store in plastic freezer bags.

Prepare all vegetables, grate garlic, chop parsley and shred or chop chicken. Have cooking spray, chicken broth, coconut milk, curry powder and yogurt measured and ready to use.

Bring a 10" non-stick pan with lid to med-high heat. Lightly coat with cooking spray. Add the broccoli and green beans and stir fry for about 3 minutes. Add chicken broth a little at a time to prevent sticking and burning. Add the zucchini, red pepper, garlic and curry powder. Continue to stir fry, and to add chicken broth as necessary to prevent sticking. When the vegetables are cooked to your taste, add the rest of the chicken broth, the coconut milk and the chicken. Heat through. Taste for salt and pepper, and add as necessary.

To serve immediately, add the yogurt, stir through to heat but do not bring to the boil. Serve immediately.

If you are going to pack the meal for a transportable lunch, do not add the yogurt. Pack everything except the yogurt in a microwaveable dish. Pack the yogurt separately. Warm the chicken and vegetables, then add the yogurt. Serve.
