Chocolate Chip Pumpkin Protein Snack Bars

Ingredients

    WET:
    2 tsp vanilla extract
    20 drops NuNaturals Vanilla liquid Stevia
    4 large egg whites or 1/2 cup liquid egg whites
    1 can of pumpkin (15 oz)
    1/2 cup applesauce, unsweetened
    1 cup almond milk, unsweetened vanilla

    DRY:
    1 tsp NuNaturals Stevia No Carb Blend
    1 tbsp ground cinnamon
    1 & 1/2 tsp ground ginger
    1/2 tsp ground clove
    1/4 tsp ground nutmeg
    1.5 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 & 3/4 cup oat flour (gluten free, Bobs Redmill)
    1/4 cup oat fiber
    3 scoops vanilla whey protein (96 grams)
    2 tbsp chia seeds
    1/4 cup Ghiradelli Bittersweet Chocolate Chips (64 chips)

Directions

Preheat oven 350

Serving Size: 12 bars

Mix together all wet ingredients in a bowl. Set aside.

Mix together all dry ingredients in a bowl. Add the dry mix to the wet mix. Pour into a 9X13 glass baking dish. Spread evenly. Sprinkle chocolate chips over the top.

Bake 25-30 minutes at 350 degrees.
