1 red pepper, chopped
1 yellow pepper, chopped
1 green pepper, chopped
1 cup of chopped celery, raw
1 cup of diced onion, raw
1 can corn, drained
1 can black beans, drained & rinsed
1 can black eyed peas, drained & rinsed
1/2 cup canola oil
1/2 cup apple cider vinegar
1/3 cup sugar
This tastes better the longer it can marinade.
Mix the other ingredients in a bowl, add and mix in cooled liquid, stir to coat. Refrigerate.
Serve with scoop chips (nutritional info not included).
Serving Size: Makes approx 16 3/4 cup servings.
