TexMex Chicken Casserole

Introduction

I'd recommend using tastier cans of beans, more tomatoes and more flavorful cheese. But this is what I had around. I'd recommend using tastier cans of beans, more tomatoes and more flavorful cheese. But this is what I had around.
Number of Servings: 4

Ingredients

    7.5 Corn Tortillas
    10 oz Shredded Chicken (boiled and shredded)
    15 oz can of black beans
    10 oz can of Diced Tomatoes & Green Chiles (like Rotel)
    1 cup Whole Kernel Corn (from the can)
    4 oz shredded Mozzarella (part-skim, low-fat)

Directions

Cut up the tortillas. Layer them in a sprayed casserole dish, then layer chicken corn, beans, rotel. Repeat, then cover in tortillas and cheese. Cover dish with foil, Bake at 350 ish for 20-25 minutes. Remove foil, broil. Cut into 4 servings.

Serving Size: makes 4 servings
