Cucumbers in Yogurt Salad

Introduction

Creamy and cool salad - great for hot summer days! Creamy and cool salad - great for hot summer days!
Number of Servings: 4

Ingredients

    1 medium cucumber, peeled and very thinly sliced
    1 small onion, peeled and very thinly sliced
    1/2 tsp salt
    1/2 tsp garlic powder
    1 tsp lemon juice
    1/2 tsp marjoram
    8 oz. plain low calorie/fat yogurt

Directions

Peel and thinly slice cucumber and onion. Lay them out on paper towels and sprinkle with salt. Drain and pat dry. Combine remaining ingredients and mix thoroughly. Fold in the sliced cucumber and onion. Cover and refrigerate for at least an hour -- 24 hours is better.
Yields 2 cups or 4 servings
