Chicken Fried Rice

Introduction

I combined two recipes into one for this one. My family loved it! Some of the ingredients were used for a marinade and didn't make it into the actual finished product. Ingredients

    Marinade:
    1/4 cup Shoyu
    2 Tbsp. Oil (I used Tastefully Simple's Garlic Infused Oil)
    1 tsp. Honey
    2 large chicken breasts, diced into bite sized pieces

    Fried Rice:
    4 cups cooked brown rice
    3 large eggs
    4 cups chopped broccoli
    2/3 cup chopped onion (I used frozen)
    3 tsp. minced garlic
    2 tbsp. oil
    2-4 tablespoons oil
    6 tablespoons Shoyu
    2/3 cup. water

Tips

After marinating chicken, you can drain excess marinade. You can make the fried rice as is without using any meat also. Add your own veggies, tailor it to your own tastes. Enjoy.


Directions

Marinate chicken in marinade for 25-30 minutes. Add 1 tbsp. oil to skillet and get oil hot. Add chicken and cook until done (no pink left). Take it out of the skillet and put it in a bowl off to the side. Add second tablespoon of oil to skillet and get it hot. Add onions and garlic and cook 1-3 minutes or until onion is translucent. Add eggs and mix until cooked. Add broccoli for 3-4 minutes. Add a little sea salt. Add cooked rice and chicken to the pan (discard any extra marinade). Season with 2 more tablespoons of oil, 3 tablespoons of Shoyu and water. Cover and steam for 2-3 minutes. Garnish with scallions if you wish. Serves eight.
