Coconut Curry Broad Beans

Introduction

Yummy coconut curry sauce with broad beans Yummy coconut curry sauce with broad beans
Number of Servings: 2

Ingredients

    1 tin broad beans (10 ozs)
    2 tbs thick coconut milk
    1 tsp curry powder
    2 cloves garlic diced
    1 small onion diced
    1 sprig thyme
    1 stalk escallion
    3 pimento berries (allspice)
    1 cup frozen veggies
    1 whole scotch bonnet pepper
    1 cup water

    salt and pepper to taste

Directions

Add coconut milk and 1 cup water to saucepan. season with salt and pepper to taste.
Add curry powder and cook for 5 minutes.
Add seasonings: garlic, onion, escallion, thyme,pimento and whole scotch bonnet pepper and cook for another 5 minutes.
Add beans with packing fluids and frozen veggies and cook everything together for 15 minutes on medium.
Make sure the mixture doesnt dry out. It should be the consistency of a thick stew.

have with rice and a salad
