sweet potato/onion/bacon scramble

Bacon, 6 slices
Bacon grease, 4 tsp (estimated)
Sweet potato, 2 small sized ones
Onion, 1 medium
Egg, 7 extra large
Apple, 1 small
*if you use smaller eggs, recalculate the nutrition info
Tips
At the restaurant, they served this with cheese. I believe it was Swiss cheese. Looks nice garnished with some apple slices, if preferred.
*note: I am CONSTANTLY tweaking this depending on what I use to make it on a particular day, so if you look at the recipe today it may be different quantities/nutrition info of what you saw the last time you looked. (it's because I use THIS for my food tracker)
Directions
2. while bacon is cooking: peel then dice up sweet potato and dice the onion
3. after bacon is cooked and removed from the pan to drain on paper towels, reserving some of the grease, cook the potato and onion until cooked through, stirring occasionally so all cooks evenly
4. while potato/onions are cooking, whisk eggs with milk
5. remove potato/onions from pan once cooked through
6. scramble eggs in same pan, until done
I layered the potato/onions, then bacon, then eggs .... and I proportioned them out right away into 3 equal servings.
